Root cellars are dark storage spaces designed to preserve vegetables and fruit without refrigeration for months at a time. While its name might suggest otherwise, any dark, unheated space will work just as effectively – from closets and spare bedrooms to sheds or even part of your garage! However, some rules must be observed in order for success: for instance never store fruits with vegetables as this produces ethylene gas which causes food spoilage more rapidly; fully insulate your space with door access for access and ventilation; finally it should remain mold- and mildew free and pest free – leaving nothing but dryness at your fingertips!
The Root Cellar, located in Portland, Maine is a nonprofit organization with a mission of engaging neighbors and volunteers to foster social, economic, and spiritual well-being, in keeping with God’s kingdom. The Root Cellar achieves this by operating a community center for inner city children that offers chemical-free recreation activities as well as education; also offering medical and dental clinic services along with food distributions.
Root Cellar was established as a community center in a dirt floor church basement in 1984 and has since expanded into an all-inclusive nonprofit serving inner city families. Their volunteer-based community now numbers over 156 individuals who provide vital assistance through programs like English learning.
As immigration to the US increases, so has demand for English Language Learner classes. In response, Root Cellar developed a volunteer training program and recruited new instructors; their volunteers also provide additional support by taking attendance and handing out materials during lessons; additionally they have even introduced a child care service so immigrant mothers may attend class while their children are cared for by volunteers.
